If you’re looking for a story of recipes handed down from generation to generation, scrawled on yellowed note cards, splattered with stains and coveted by every family member – look somewhere else. If you’re looking for a simple story about a girl “just winging it” in her tiny kitchen with Fisher price-like cookware and appliances, then this is for you.

Nikki has always loved to cook for others and loves to create new exciting combinations of flavors for her family and friends to try. Without any classical training or education, Nikki follows her gut in the kitchen and when asked what she is cooking, she is often heard saying “just winging it”. And that is exactly what happened the day she created Orange Ginger Marmalade. After returning home from shopping, Nikki realized it was unlikely that she and her husband would actually finish the ginormous bag of fresh oranges she just bought before they went bad. And so she decided to make an orange marmalade for the first time. While making the marmalade (and reading through many cookbooks on just how to do so), she saw a chunk of fresh ginger in her vegetable drawer. Following her gut, she peeled it and threw the whole chunk in. Once she was on her way to creating something new, she went to her spice cabinet and instantly grabbed whole cloves and cinnamon sticks. Nikki often turns to the flavors of cloves, cinnamon and allspice to add a deeper, homier feel to her dishes. Her grandmother, Dodo, used these spices as a final touch on everything from gravies to homemade applesauce.

Once Nikki’s husband, the self proclaimed quality control inspector, returned home he reviewed the latest creation. His love of food instantly lead him to spread the Orange Ginger Marmalade on a cracker and top it with a big hunk of Gruyere cheese. With that bite, Nikki’s Jams was born. And from there out of the love for cheesecake, came Blueberry Lemon Lavender. Followed by Bacon Maj, born out of the love for, well bacon and everything that goes with bacon (and really what doesn’t?).

Nikki hopes that her flavorful Jams will inspire anyone who loves food to create new dishes and pairings in their kitchen, no matter how large or small. Her motto, just open up a jar and wing it.
